Flagship ‘Go Cheese’ producer targets FY28 completion to capture surging HoReCa demand and expand ‘Avvatar’ whey protein extraction.

Leading Indian dairy FMCG player Parag Milk Foods Ltd (PMFL) has received formal board approval for a ₹105 crore ($12.5M USD) capital expenditure program to double its cheese manufacturing capacity from 60 metric tonnes per day (MT/day) to 120 MT/day. The brownfield expansion, targeted for completion by FY28, will be financed through a balanced combination of internal cash accruals and debt financing, reinforcing the company’s strategic pivot toward high-margin, value-added dairy derivatives (VADP).

The capacity ramp-up centers on the company’s flagship brand, Go Cheese, which commands an estimated 35 percent market share across India’s organized cheese sector. Operating across retail modern trade, e-commerce, quick-commerce channels, and general trade, the portfolio encompasses mozzarella, cheddar, processed blocks, slices, spreads, sauces, and specialty varieties. Beyond consumer packaging, the expanded output will directly supply surging institutional demand from hotels, quick-service restaurant (QSR) chains, and catering businesses (HoReCa) navigating India’s booming Western-style foodservice market.

Crucially, expanding cheese vat capacity delivers direct co-product synergies for Parag Milk Foods’ sports nutrition and functional ingredient pipeline. Increased cheese throughput yields higher volumes of liquid whey stream, enabling the company to scale manufacturing of its Avvatar whey protein isolate and concentrate brands. By capturing both the high-value curd for premium cheeses and fractionating the resulting whey on-site, PMFL optimizes whole-milk economics and strengthens gross processing margins.

The capital allocation aligns with rapid macroeconomic growth in India’s organized cheese consumption. According to market projections from IMARC Group, the Indian cheese sector is estimated to expand from approximately ₹12,900 crore in 2025 to nearly ₹62,000 crore by 2034, driven by urbanization, higher disposable incomes, and the expansion of organized pizza, burger, and bakery chains. Rahul Kumar Srivastava, Chief Operating Officer of Parag Milk Foods, noted that the 120 MT/day roadmap enhances overall processing efficiency and provides the infrastructure needed to accelerate new product development in gourmet cheeses.

Parag Milk Foods currently operates multi-product processing hubs in Manchar and Thorandale (Maharashtra) and Palamner (Andhra Pradesh), complemented by Bhagyalaxmi Dairy Farm’s automated 5,000-cow herd powering its Pride of Cows brand. The ₹105 crore cheese expansion underscores how Indian private dairy processors are aggressively redeploying capital away from low-margin liquid milk towards specialized lipid and protein fractionation, cementing their competitive moat against both domestic dairy cooperatives and multinational imports.
