Once operational, the high-tech processing complex will have the capacity to handle 30 lakh (3 million) liters of raw fluid milk every day. The facility’s defining highlight is its massive cultured dairy division, engineered to produce 1,000 metric tonnes (10 lakh kilograms) of curd, traditional mishti doi, yogurt, and lassi daily. By establishing a dedicated, high-capacity curd plant close to major metropolitan markets, Amul aims to meet surging regional consumer demand for packaged, high-protein fresh dairy products while elevating West Bengal into a major dairy manufacturing hub.

In addition to its curd output, the integrated Sankrail complex will feature specialized processing lines for a diverse range of value-added commodities. The daily operational layout includes capacity for 10 lakh liters of standard packaged milk, 2 lakh liters of Ultra-High Temperature (UHT) long-life milk, 1 lakh liters of ice cream, 20 metric tonnes of paneer, 10 metric tonnes of pure ghee, and 10 metric tonnes of traditional milk sweets. This broad production blueprint allows the cooperative to maximize processing efficiencies across every drop of raw milk collected.

The inauguration aligns closely with the central government’s White Revolution 2.0 policy framework, which focuses on empowering primary agricultural cooperative societies (PACS) through digital integration. Alongside the physical plant launch, Shah handed over registration certificates to more than 200 newly established milk cooperative societies across West Bengal. The localized procurement framework is projected to directly connect over 1.25 lakh regional cattle rearers—including more than 30,000 women producers—to a transparent market, securing direct bank transfers and eliminating exploitative intermediaries.
