Much of India’s dairy sector remains highly fragmented, dominated by millions of smallholder farmers who produce modest volumes of milk. While this decentralized structure has supported rural livelihoods and food security, it also presents challenges for scaling productivity and efficiency across the industry. As a result, improving how existing milk is processed, marketed and monetized may be as important as increasing supply.

One potential pathway lies in moving up the value chain through greater production of premium dairy products such as cheese, yogurt and specialized nutrition items. These categories typically deliver higher margins compared with fluid milk and commodity products, allowing dairy companies to generate greater economic value from the same volume of raw milk.

Technology and data are also expected to play a growing role in unlocking productivity gains. Digital tools, better supply chain management and improved milk quality monitoring could help processors and cooperatives optimize operations, reduce waste and create more consistent product quality across the sector.
